I have tried to call you a couple of times but there was no answer and no return call from my voicemail. As with every side, quarter and whole carcass we prepare, the cutting specs provided by the customer is what we are guided by when we do the butchering of the purchase. Obviously we are not going to trim down a roast to get the weight to be gram perfect, that’s why we ask for a weight range for roasts. For example: roasts at 1.5kg to 2kg. The animals we source are of differing weights so what may be 2 pork loin chops weighing 500 grams off a 20kg side may be 600 grams off a 30kg side.
As for the delivery comment, if we were only doing the one delivery per day, it would make it so much more easy for us to give a more accurate delivery time. Often we are delivering 40 plus orders per day and holdups do occur. Especially if we have to go to transport companies as may be the case with your delivery run. If there was a note put on the order or you would have asked us when we spoke about the cutting specs, we would have been more than happy to give a better delivery time indication when we completed the run sheet the day prior to your delivery.
