These lamb mini roasts are the perfect size for two, giving you a beautifully tender, pink and juicy lamb roast on the table in 30 minutes. The marinade is delicious!
* Bring the lamb to room temperature and par cook some new potatoes and pumpkin (microwave for 5 minutes) while you preheat the oven to 200C fan forced or 220C without fan
* Put the lamb & veg into a roasting pan lined with baking paper or use an oven bag for no-mess cooking. Throw in some cherry tomatoes (or small truss tomatoes if you want to be fancy)
* Sit back with a glass of wine while you roast everything for 20 minutes.
* Rest the lamb in a warm spot for 5 minutes before slicing, use this time to wilt some fresh leafy greens with garlic & butter... perfection!
Now there's no excuse not to have a lamb roast any night of the week!
