It can't be understated enough that how stir fry strips are cut has a massive impact as to how they perform when cooked. We see all too often "butchers" selling stir fry strips that are cut too thick, in a finger-like shape. All this will result in is the meat stewing in it's own juices and becoming tough.

We cut our strips out of a thick sliced piece of steak that we have fully denuded, meaning all connective tissue, sinew, gristle & fat has been removed. The thin, flat pieces are ideal to apply the heat required to flash fry which will give you desired result.

Most important is to do the meat separately from the vegetables and to use high heat with continual agitation of the products when cooking. We also suggest to not waste your time with pre-marinated stir fry concoctions with the meat, vegetables and sauce all in the same mix. These will all just stew in the sauce and lack the tenderness and crispness desired in stir frys.
