Defrost product in the fridge
Preheat oven to its maximum temperature
Pat skin dry with paper towel and smother with Extra Virgin Olive Oil
Apply a liberal amount of course salt to skin
Place in oven for 20-25 minutes at maximum temperature then reduce heat to 180 degrees celsius and cook for 30 minutes per kilogram
Increase the temperature to 220 degrees celsius for the last 10-15 minutes
Internal temperature of this product when cooked needs to be 68-70 degrees celsius
