If you love your roast duck then if able to migrate up to goose - it is a superior culinary experience. Unfortunately difficult to source outside of Xmas. Crispy skin slow roasted with meat falling off the bone. Perfect with roast vegetables and a pinot noir. Ensure to capture and save the fat - perfect for roast potatoes.

I have totally forgotton how flavourfull geese are, I purchsed two geese for xmas lunch.
After cooking the geese & carving them up on the plate, I started crying with joy how I missed my mum cooking the goose's for xmas. How delicious & tender they are.
